奶油煎美國封門柳伴希臘沙律
Pan fry US Prime Hanging Tenderloin, serve with Greek salad
材料 Ingredients
美國封門柳,約250g
US Hanging tenderloin approx 250g
無鹽牛油,一片
1 slice of unsalted butter
迷迭香,兩條
2 sticks of rosemary
油及海鹽
Oil and sea salt
煮法 Cooking method:
1/ 用小煎鑊中火加油煎牛扒每邊一分鐘
Pan fry the steak in oil for 1 minute on each side in medium fire
2/ 轉細火加百里香、牛油、海鹽再煎約5分鐘, 煎的過程每邊返兩次,及用迷迭香不停地掃鑊裏的牛油在牛扒上
Turn to low fire, add in rosemary, butter, sea salt and cook for another 5 minutes, turn the steak twice on each side while cooking and keep on spreading the rosemary and butter on the steak
3/ 熄火後取出靜止三分鐘
Turn off the fire and rest for 3 minutes
4/ 逆紋切細上碟便完成
Cut across the grain of the steak and serve
